3 ripe avocados
½ c tomatoes, chopped
¼ c onion, finely chopped
1 jalapeño pepper, seeded & finely chopped
1 tsp salt
T T lime juice
Black Pepper, to taste

Directions:
Directions:
Cut each avocado in half and remove seed from the avocado. There is a big seed in the middle, this will remain in one half.

To remove the seed, hold avocado in palm of hand, stab the seed with a sharp knife. Gently twist knife and remove the seed.

Scoop out avocado pulp into a large bowl. Mash until avocado is desired consistency (slightly lumpy). Add chopped tomato onion, jalapeño, salt and lime juice.

Top with black pepper.

Notes: A couple tablespoons of fresh cilantro is a nice addition to this. Also, use Vidalia or red onion.
