Ingredients: 2 large scoops of ice cream, any flavor 2 large,flat, round, crisp cookies or 2 Brownies or 2 Pound Cake slices
Meringue: 2 large egg whites, room temp. 1/8 tsp. salt 1/8 tsp. cream of tartar 1/4 cup sugar 1/2 tsp. vanilla

Directions:Place a 3/4 inch thick 10 x 6 inch clean board in freezer. Scoop ice cream in large ball (to fit on top of cookie, brownie or pound cake slice) on to foil. Place with cookies, brownies or pound cake in freezer to harden overnight. Prepare meringue as follows: Whip egg whites in a medium bowl until frothy. Sprinkle salt and cream of tartar over egg whites and beat at high speed to blend. Continue beating, gradually adding sugar until meringue holds stiff peak and sugar is dissolved. Add vanilla. Beat until blended. Place cookies or brownies or pound cake on frozen board. Center a scoop of ice cream on each. Working quickly, spread meringue evenly and smoothly over ice cream, covering ice cream and cookie completely. At this point bake immediately or freeze up to 24 hours, if desired. Before serving, preheat oven to 475ºF. Place frozen board on a baking sheet. Bake 2 to 3 minutes until meringue is golden brown. Top with Hot Fudge sauce, Melba sauce, Strawberries or any other favorite sauce. Serve immediately. Makes 2 large servings. |
