1 cup finely diced onions
1/4 pound diced salt pork
3 tbsp. butter
3 cups chicken broth
1 1/2 pounds potatoes, peeled and diced-about 3 cups
1 bay leaf
3 dozen clams or 3 cans minced clams
1 cup bottled clam juice
3 cups milk
1 cup heavy cream
salt and pepper to taste
1 packet instant potatoes(optional)

Directions:
Directions:
Saute onions and salt pork in butter until onions are soft. Add stock, potatoes, bay leaf and pepper. Cover, bring to boil and simmer 10 minutes. Potatoes should remain slightly crisp. Remove bay leaf. Mince clams, add to chowder with juice, cream and milk. Reheat. Season with salt. Can also make in crock pot by adding all ingredients after sauteing onions and salt pork. Add 1 pakage of instant potatoes to make thicker chowder.
