2 pounds Idaho potatoes, peeled
1 stick of unsalted butter
1 cup (8oz) cream cheese
3/4 cup to 1 cup of warmed milk
1 Tablespoon Kosher salt
black pepper to taste

1. Boil or steam potatoes until tender

2. Using a mixer, incorporate all ingredients and adjust seasonings as necessary.

Note: Watch the milk and add slowly until you get the consistency that you prefer.

When I worked for Walt Disney World in 2007 my favorite place to eat was Le Cellier. Incase you have never had the pleasure of eating there you will find it at Epcot's World Showcase in Canada. I was able to get this recipe from a friend who happened to work there at the time.
