3 lbs. Pork Shoulder
1 Quart hot water
1 Quart apple cider vinegar
½ cup Tabasco sauce
½ cup sugar


Pig sauce

2 cup ketchup
2 ½ cup cider vinegar
1 ¾ tea. salt
½ cup sugar
1 ½ Tbsp. Worcestershire sauce
1 ½ Tbsp. black pepper
3 Tbsp. vegetable oil
½ tea. garlic powder

Directions:
Directions:
In a large bowl, dissolve sugar in water, add vinegar and Tabasco sauce, mix well. Place pork in marinade, cover and refrigerate for at least 12 hours, turning occasionally.

Preheat oven to 450º. Transfer pork to a baking dish and bake until well browned. Reduce heat to 300º and pour some of the marinade over the pork. Cover with foil and roast an additional 2 hours or until the pork is tender. Discard the remaining marinade.

Pig Sauce

In a medium pan, combine all ingredients except oil. Mix well and bring to a boil. Add oil and lower heat and simmer 20 minutes to thicken.
