2 c butter
2 c sifted icing sugar
2 tsp vanilla
2 eggs
5 c flour
1 tsp salt
½ tsp baking soda
raspberry jam

Directions:
Directions:
In bowl, cream butter with 2c icing sugar until light and fluffy; beat in vanilla and eggs. Combine flour, salt, and baking soda; gradually blend into creamed mixture. Press into ball; chill if soft.

On a lightly floured surface, roll out about ¼ of the dough at a time to 5mm thickness. With a cookie cutter cut dough into shapes. With a smaller cutter cut out holes in half the cookies. Bake at 375ºF until lightly browned (aprox 8min). Let cool.

Spread jam over whole cookies and place cookies with a hole on top. Sprinkle with icing sugar if desired.

Yield: 60 6cm cookies.

As a child Mum and I would make Jelly Belly Bears using bear shaped cookie cutters and making the hole with a pop bottle top in the bear's tummies.
