4 c. coarsely shredded zucchini (2-3 medium zucchini)
3 c. all-purpose flour
2 ½ c. sugar
1 ¼ c. vegetable oil
4 eggs, beaten
1 T. plus 1t. vanilla extract
1 T. ground cinnamon
1 ½ t. salt
1 ½ t. baking soda
½ t. baking powder
1 c. chopped nuts

Directions:
Directions:
Heat oven to 325º. Grease generously, bottoms only, of 2 loaf pans (9x5x3). Blend all ingredients on low speed, 1 minute, scraping bowl constantly. Beat on medium speed 1 minute. Pour into pans. Bake 50 min. to 1 hr. (or until toothpick inserted in center comes out clean). Cool 10 minutes. Remove from pans. Cool completely.
