6 chicken breasts, bone in, skin on
3 Tbsp olive oil
Kosher salt & freshly ground black pepper

Directions:

Preheat oven to 375º F.

Place chicken breasts on a sheet pan and rub with olive oil.
Sprinkle generously with salt and pepper.
Roast for 35 to 40 minutes (depending on size of the chicken breast), or until cooked through.

I had this recipe in my first cookbook, Marian's Way, I felt I should include it again.
This is a very easy and versatile recipe. This is the method I use whenever I need cooked chicken for a recipe...ie. chicken salad, chicken potpie, etc.
The result is a very juicy and "chickeny" tasting chicken.

SQUIRREL TOWN

About a 10 minute walk across the field behind the farmhouse was a giant willow tree. It was old and crooked and the trunk was slanted low to the ground and curved upward into the tree.
We loved to play in this tree.
The slant on the trunk was such that we could run right up it and into the tree…like squirrels. Hence, we give it the name Squirrel Town.
We played that we were a village of squirrels, with areas in the tree for our houses, someone was declared the “Mayor of Squirrel Town” (usually my Uncle Jerome) and our imaginations were the only thing that limited us in our game. It was one of our favourite play areas.
