2 lbs. ziti, cooked
2 lbs. ricotta
8 oz. shredded mozzarella
1/2 c. grated parmesan cheese
2 eggs
1/4 c. dried parsley
Sauce

Directions:
Directions:
Mix together - ricotta, eggs, parmesan, 4 oz. mozzarella, and and parsley in a large bowl. Spread 1½ c. sauce on bottom of large (larger than 13x9) baking dish or pan. Add cooked ziti. Spoon ricotta cheese mixture over ziti and mix well. Add 1-2 c. more sauce over top and sprinkle remaining mozzarella cheese on top.

Bake at 350º for 30 minutes, uncovered.

In the summer, sometimes Mom would make this instead of macaroni. GP would barbecue chicken (Open Pit BBQ sauce) and we'd have the chicken and salad after the Baked Ziti.
