1 cup hot mashed potatoes
1 cup flaked red salmon
1 tsp. lemon juice
1 egg, beaten
salt and pepper to taste
plain bread crumbs
oil for frying

For white sauce:
2 T. butter
2 T. flour
1 cup milk
¼ tsp. salt
⅛ tsp. pepper
frozen peas, as desired

Directions:
Directions:
Combine potatoes and salmon. Season with salt, pepper and lemon juice. Shape into rounded patties, roll in bread crumbs, dip in egg, then roll again in bread crumbs. Put in the frig for 30 minutes to set. Heat enough oil to coat frying pan and add croquettes. Brown both sides, adding more oil if necessary. Heat oven to 350º F. Place croquettes on a baking sheet and bake for 10-15 minutes. To make the white sauce, melt butter in a sauce pan. Mix in flour until smooth. Add milk slowly stirring constantly. Add salt and pepper. Cook slowly until boiling point is reached, stirring often. Remove from heat and add peas, as many as you like. Serve by pouring the sauce over the croquettes. Add a salad and you have a great meal.
