1 pint fresh strawberries, rinsed, dried and hulled
7 ounces spring mix, baby spinach or combination
½ cup walnut pieces, toasted
½ cup (2 ounces) crumbled goat cheese

Walnut balsamic vinaigrette
2 T. balsamic vinegar
½ t. dijon mustard
3 T. toasted walnut oil (can leave out if you don't have it)
2 T. olive oil
Salt and freshly ground pepper

Directions:
Directions:
Cut the strawberries in quarters, place them in a small bowl, and toss them with about 2 tablespoons of the vinaigrette. Set aside.

Combine the vinegar, mustard, and both oils in a glass jar and seal the lid tightly. Shake the jar vigorousl to combine.

Serve the lettuce, strawberries, toasted walnuts, vinaigrette and crumbled goat cheese all separately and dress right before serving.
