1 tablespoon vegetable oil
1 cup chopped yellow onion
3 garlic cloves, minced
1/2 cup sour cream
1 - 15 ounce carton ricotta cheese
2 - 10 ounce bags frozen, chopped spinach (thaw, then squeeze dry)
1 cup grated Parmesan cheese
2 - 28 ounce jars pasta sauce (any brand)
1 box lasagna noodles ("no boil" type)
1 egg
1 - 16 ounce pkg. shredded mozzarella cheese
1/4 teaspoon basil and oregano

Heat oven to 350º

Warm 1 tablespoon vegetable oil in large skillet on medium heat. Add onion and garlic. Sauté until tender. Stir in pasta sauce and bring to a boil. Reduce heat to Low and simmer uncovered 10 minutes. Remove from heat.

Prepare spinach - drain and squeeze dry. In a medium bowl, mix ricotta, 1 1/2 cups mozzarella, sour cream, spinach and Parmesan cheese. Spray Pam on 9" x 13" casserole dish and spread 1 cup sauce on bottom. Layer 4 noodles, 1/3 of spinach mixture, and 1/3 of pasta sauce. Repeat two more times, ending with sauce. Sprinkle remaining 1 1/2 cups mozzarella and 1/2 cup Parmesan on top.

Bake, uncovered, 45 minutes. Let stand 10 minutes before cutting.
