Barbecue Sauce

2 cups ketchup
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1/4 cup firmly packed brown sugar
2 tablespoons molasses
2 tablespoons prepared yellow mustard
1 tablespoon Tabasco sauce
1 tablespoon of barbecue rub
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon liquid smoke

Directions:

1. Combine all of the ingredients in a nonreactive saucepan and slowly bring to a boil over medium-high heat.

2. Reduce the heat to medium-low and gently simmer until dark, thick, and richly flavored, 10 to 15 minutes.

Transfer the sauce to a clean jar and store in the refrigerator. It will keep for several months.

Kansas City Style Rub

1/4 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne

1. Combine all ingredients together and transfer to an airtight container. This rub may be stored up to six months in a cool, dark place.
