Olive oil, for frying
1 ¾ C grated parmesan cheese
1 ½ C breadcrumbs
salt
2 large eggs
3 medium zucchini, cut into 3” long x ½” wide strips

Directions:
Directions:
1. Pour enough oil into a skillet to measure 2 “.
2. Heat the oil over medium heat (350’)
3. Stir 1 ½ C parmesan cheese, bread crumbs and salt to blend.
4. Whisk the eggs in another bowl to blend
5. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into
the bowl.
6. Coat the zucchini in breadcrumb mix, patting to adhere and coat completely.
7. Place the zucchini strips on a baking sheet.
8. When oil is hot: working in batches, fry the zucchini sticks until they are golden brown about 3 minutes.
9. Transfer the fried zucchini to paper towels and drain.
10. Arrange the fried zucchini on a platter, sprinkle with parmesan cheese and serve.
