2 cups quinoa, uncooked
½ medium sweet onion
1 green pepper (red or yellow or a combination work, too)
3-4 diced carrots
3-4 diced celery stalks
½ cup green or black olives, diced
1 can garbanzo beans
¾ cup Asiago cheese, cubed
Minced garlic, to taste
Olive oil
Seasoned rice vinegar or lemon
Salt
Pepper

Cook quinoa according to directions. Add approximately ¼ cup of olive oil to coat. Cool. Add vegetables, olives, beans and cheese. Mix in olive oil and vinegar and season to taste.

This is really a "whatever you have" kind of salad. All of the ingredient amounts are arbitrary.
I have added many different combinations of veggies, beans, and cheese (try feta) to the quinoa and it has always been delicious. Good for you, too!
