¾ c chopped green onion
1 c mayonnaise
3 Tbsp lemon juice
¾ tsp tarragon
3 cloves garlic
2/3 c melted butter
2 Tbsp Parmesan cheese
12 or more sheets phyllo dough*
3 chicken breasts, skinned and boned

* Found in frozen foods section of grocery store, usually by the pie crusts.

Directions:
Directions:
Mix first 5 ingredients and set aside. Lay two sheets of phyllo dough on cutting board and baste with butter. Do this again with 6 to 8 sheets phyllo.

Place chicken breast in corner of dough and spread with mayonnaise mixture. Wrap phyllo around chicken.

Place in baking dish and sprinkle with cheese. Bake for approximately 30 minutes at 375 degrees. (This cooks surprisingly quickly!)

Note from Jane: Everyone loves this elegant dish. I would consider adding more Parmesan cheese to inside of roll next time. I think the Parmesan cheese would be good on the inside as well as the outside.
