1 ½ cups all purpose flour
1 egg
1 ½ tsp. baking powder
¾ cup sugar
¼ tsp baking soda
¼ tsp ground cinnamon
¼ tsp nutmeg
¼ tsp cloves
1 cup mashed bananas (4 medium, dark/ripe)
¼ cup oil
½ cup chopped pecans

Preheat oven to 350º
1. Grease the bottom and 1/2 inch up the sides fo an 8x4x2 inch loaf pan; set aside
In a medium mixing bowl combine the flour, baking powder, soda, spices, and ⅛ tsp salt. Make a well in the center of dry mixture; set aside.

2. In another bowl, combine the egg, bananas, sugar, and oil. Add egg mixture all at one to dry mixture. Stir till moistened (batter should be lumpy). Fold in nuts

3. Spoon batter into prepared pan. Bake in the oven at 350º for 50 to 55 minutes or until toothpick comes out clean. Cool on wire rack for 10 minutes. Remove loaf from pan; continue cool on rack. Wrap and store overnight before slicing.
