1/2 cup butter or margarine
1/2 cup crunchy peanut butter
1.2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 cup flour
3/4 tsp. baking soda
1/4 tsp. salt

Directions:
Directions:
Preheat oven to 375º
Thoroughly cream butter, peanut butter, sugars, egg, and vanilla.
Sift together dry ingredients; blend into creamed mixture.
Wrap the dough in plastic wrap and refrigerate for at least an hour.
Shape in 1-inch balls; roll in granulated sugar. Place 2 inches apart on un-greased cookie sheet.

Bake at 375º for 10 minutes

From John: "My girls always enjoyed helping roll the balls. Just take a pinch of the dough and have them roll it in the palms of their hands. then roll in the sugar. If the dough is chilled it doesn't stick to your hands. If you don't chill it, it will coat your hands which means licking it off is the best way to go but you don't get the cookies!"
