⅔ cup vanilla wafer crumbs (12-15 cookies)
¼ cup cut-up red candied cherries
½ cup chopped salted almonds
1 quart vanilla ice cream - slightly softened
red and green candied cherries to decorate
sliver/gold foil cup cake liners

Directions:
Directions:
In a large bowl soften ice cream only enough to be able to add cookie crumbs, ¼ cup cut up cherries and the almonds. Mix together. Divide ice cream mixture among 8 foil-lined medium muffin cups. Work fast to avoid melting. Cut 4 candied red cherries in half. Slice green cherries in half, then into 4 slices to use to decorate top. Place one red cherry half off center on top of ice cream, then arrange 2 green cherry slices to look like leaves next to it. Cover muffin tin with foil and freeze until firm at least 4 hours. Before serving, pull out of freezer for 5-10 minutes to make eating easier. These look really pretty arranged on a serving plate.

This is Michael's favorite Christmas dessert. I've made these since the 80's and still make sure they're in the freezer when he visits. Delicious and so easy!
