½ small onion, chopped
1-2 garlic cloves, chopped
1 tbs olive oil
1 can beans
1 ½ cups brown rice
½ cups lentils
3 cups chicken broth (or can do half water, half chicken broth)
Salt and crushed red pepper to taste
Parmesan cheese to taste

Directions:
Directions:
Saute garlic and onion in 1 tbs olive oil in a skillet until golden and translucent. Add lentils, rice and chicken broth (or water). Add salt and crushed red pepper to taste. Cook about 40-45 min until lentils are tender but not mushy. Add beans, sprinkle parmesan cheese and serve.
