1/4 cup butter
4 oz. bacon
2 T diced red onion
1 minced garlic clove
6 oz. jar drained roasted red pepper
6 oz. jar drained quartered artichoke hearts
1 pkg. frozen, thawed collard greens
salt and pepper to taste
Lemon juice from 1 lemon

Directions:
Directions:
In medium sauté pan, melt butter. Add diced bacon, onion, garlic, roasted red peppers, and artichoke hearts. Saute until bacon is cooked. Add collards and sauté until heated through. Salt and pepper to taste. Squeeze lemon over.
