3 eggs
1 ¼ cups of oil
2 cups white sugar
2 cups flour
2 cups grated carrots
2 cups cocanut
1 small can crushed pineapple (drained)
2 tsp. vanilla
2 tsp cinnamon
½ tsp nutmeg
½ tsp cloves
2 tsp baking soda
1 tsp. salt



Icing

1 8oz pkg cream cheese (softened)
2 cups icing sugar (approx)
¼ cup butter
1 tsp. vanilla
1 cup walnuts

Directions:
Directions:
preheat oven to 350º

1) Mix eggs, oil, sugar, vanilla and spices. Beat until well combined. Add all remaining ingredients. Mix until combined. Pour batter into greased and floured bundt pan and bake for one hour. Cool on wire rack.

2) Whip butter, cream cheese and vanilla. Add icing sugar (more or less than 2 cups depending on the desired consistency)

3) Sprinkle walnuts on top of the icing sugar.
