8-12 small red potatoes, boiled with skins on
1 1/2 C mayonnaise
1 C sour cream
1 1/2 T horseradish
1 tsp celery seed
1/2 tsp salt

Juice of 1 small lemon
1 medium onion, minced
1 cucumber, cut fine
1-2 stalks celery, cut fine
1 C minced parsley, optional
Parmesan Cheese

Directions:
Directions:
Combine mayonnaise, sour cream, horseradish, celery seed, salt, and lemon juice. Skin potatoes, slice thin and arrange a layer in bottom of salad bowl. Add a layer of celery/cucumber and onion. Add a layer of the dressing. Continue alternating potato layers with onion/ cucumber and onion, and top with dressing. End with dressing at the top. Sprinkle with parsley, shake parmesan over top. DO NOT MIX. Refrigerate over night! Enjoy!
