"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup white sugar
1/2 cups currants
1 teaspoon ground nutmeg (optional)
1/2 cup butter or shortening
1 egg
1/2 cup whole milk

Directions:
Directions:
Sift together the dry ingredients. Cut in the butter or shortening until the mixture appears mealy. Stir in sugar and currants. In a separate bowl, gently beat the egg into the milk. Gradually add the egg and milk mixture to the dry mixture. Stir as you add it until a fairly stiff dough is formed. Roll the dough out (on a lightly floured surface) to about 5 mm (¼ inch) in thickness and cut into rounds, (use a 6.5 cm or 2 1/2 inch cookie cutter). Gather up the trimmings and re roll to make more Welsh cakes. Cook on a medium hot greased griddle pan or in a heavy frying pan till light brown. About 3 to 4 minutes on each side. Serve hot or room temperature. Can be sprinkled with icing (or castor) sugar while still warm.

Personal Notes:
Personal Notes:
Traditionally these are made with self rising flour and the baking soda and baking powder are omitted. Pat often made these for Christmas.
