2 lbs tomato, halved
6 garlic cloves
3 halved shallots
1 halved, seeded red bell pepper
1 halved, seeded
1 poblano pepper, halved and seeded
1 Tbsp. cannola oil

Directions:
Directions:
Place jelly-roll pan in oven.
Preheat broiler to high.
Combine the veggies with oil
Arrange veggies on preheated pan, broil for 10 min.
Place roasted veggies in blender, remove center of blender lid place towel over opening, blend til smooth. Stir in 1 c. unsalted chicken broth, 1/4 tsp. salt, 1/4 tsp.ground cumin and 1/8 tsp. ground coriander.
Top with 1/4 c. cilantro leaves, serve with lime wedges.
