2 lbs. ground beef
2-3 c. crushed soda crackers
2 eggs, beaten
1-2 tbsp. onion, chopped
¼ c. ketchup
salt, to taste
pepper, to taste

Directions:
Directions:
Mix all of the above together well and place into a greased loaf pan.
Bake in preheated oven at 350º for approximately 1 hour or until done.
During the last 5 minutes of baking add 2 tbsp. of ketchup over the top of the meat.

This goes great with twice baked potatoes and scalloped corn. The leftover meatloaf is awesome for sandwiches the next day!!
