Ingredients:  
Ingredients:  
1 can black beans, rinsed and drained well
2 fresh ears of corn, remove kernels from the cob
2 large fresh tomatoes, diced small (can also use cherry or grape tomatoes cut into quarters)
diced red onion, about 1/4 c.
diced green onions, about 3
cilantro, minced, about 1/4 c.
1 avocado, diced small (optional)
1/2 jalapeno, minced (optional)


Dressing: can add about 2-3 t. of your desired dressing of:
Apple cider vinegar
Hendrickson Sweet salad dressing
Holly Hock Hill salad dressing

You can also add a little olive oil if you'd like. I don't find that it is all that necessary.

Mix all together. Serve with tortilla chips.
