1 lb. Gnocchi
12 oz. Asiago Cheese
2 Eggs
¼ Cup Plain Greek Yogurt
1 Medium Onion
1 Cup Chopped Mushrooms
1 Cup Diced Red Peppers
4 Garlic Cloves
4 oz. Bacon

Directions:
Directions:
Start by cooking diced bacon in a large skillet. As this is is cooking, begin boiling water for pasta.

Prepare sauce by combining 2 Eggs, 12oz freshly grated cheese, and yogurt. Stir well, DO NOT COOK.

When the bacon bits are extra crispy, remove from the pan and set to the side. Do not drain the pan.

Drop the pasta into the boiling water.

With the frying pan still on high heat, toss in the garlic, peppers, onions, and mushrooms.

When the pasta is done cooking, drain and toss into the frying pan with the veggies, sauce mixture, and bacon. Adding a little pasta water at this step will thin the sauce. Stir gently off-heat until everything is mixed well.

This recipe is a variation of Carbonara but with a thicker, Alfredo style sauce. This goes well with chicken, or mix chicken right into the pan.

The vegetables can also be cooked in coconut oil rather than bacon, cutting the cooking time down to about the time it takes to boil pasta.

This is the perfect quick mac-and-cheese!
