8 large fresh peaches pitted and peeled
1/2 c crystallized ginger finely chopped
3 large oranges, grate off peel reserve, remove pith, remove any seeds, cut into wedges
1 cup water (optional)
1 package sure gel
8 cups sugar

Directions:
Directions:
Combine peaches and ginger in food processor and pulse until finely chopped. Transfer mixture to stainless kettle with orange peel. Place oranges in food processor and finely chop. put in kettle, add water if mixture is really thick. Bring to a boil, lower heat and simmer 10 minutes stirring occasionally

Raise heat and bring to a boil. Stir in pectin. bring to boil again and slowly stir in sugar. adjust heat and simmer for 10 minutes stirring constantly. [Remove from heat. place a spoonful of jam on a cold plate and refrigerate 10 minutes, if it develops a skin its ready, if not return to boil for 5 minutes and test again.]
Have ready hot sterilized 8 oz jam jars and lids. Pour hot marmalade into the jars leaving 1/8 th inch head space. Wipe rims and screw lids on water process 10 minutes.

Original recipe didn't remove pith, I added a third orange and removed pith

Original recipe called for testing gelling. [see brackets above] I didn't have time for that nonsense so I added the 5 minutes to simmer 15 minutes total and canned it

Original recipe didn't use a water bath. This is syrup at first but sets up after a week or so.
