pan juices + pan scrapings
3 Tbs flour
2 C turkey stock (see recipe)
3 Tbs fat from turkey pan
1/2 tsp Kitchen Bouquet
salt & pepper to tastez

Directions:
Directions:
Skim fat from pan juices and reserve 3 Tbs; add 1/2 c warm water to roasting pan and place over moderate heat. bring to a boil and cook 1-2 minutes while scrapping pan to loosen scraps from bottom; pour into saucepan, on low heat add flour and whisk till thickened, add fat; slowly add juices and stock; turn up heat to medium and stir till smooth and slightly thickened; add Kitchen Bouquet for color; salt and pepper to taste
