1½ cups Uncle Ben's Original Converted Brand Rice, uncooked
1 T olive oil
1/2 lb chicken breast, cut into bite-size pieces
1/2 lb smoked chicken, turkey or vegetarian sausage, cut into slices
2 cloves garlic, minced
1 medium onion chopped
1 medium green bell pepper, chopped
3 stalks celery, chopped
3 cups chicken or vegetarian broth
2 T Cajun seasoning, divided
1 T Worcestershire sauce

Directions:
Directions:
In a heavy bottom pan with lid or Dutch oven, heat oil over medium high heat.
Add chicken, sausage, celery, green pepper, onion, garlic and half the Cajun seasoning.
Continue to heat until chicken is mostly cooked; about 5 minutes.
Add rice and saute for 1 to 2 minutes.
Add broth, remaining Cajun seasoning and Worcestershire.
Bring to a boil; cover, reduce heat to simmer and cook 20 minutes.
Let stand for 5 minutes before serving.
