1¼ cups sugar
8 oz. almond paste
1¼ cups unsalted butter
1 tsp. vanilla
6 eggs
1 cup flour
1½ tsp baking powder
¼ tsp. salt

SAUCE:
1 pint fresh or frozen raspberries or strawberries
juice from ½ lemon
½ cup sugar

Directions:
Directions:
1. Bring almond paste, butter, eggs, and vanilla to room temperature.
2. Butter and flour an 11-12 inch pan with removable sides.
3. Preheat oven to 325º
4. Mix together flour, baking powder and salt.
5. Put sugar and almond past in food processor. Process until paste is in small pieces.
6. Cream the almond paste mixture with butter and vanilla until light and fluffy.
7. Beat in eggs, one at a time, until well blended.
8. Add flour mixture until just blended. Pour into cake pan.
9. Bake at 325º for 1-1¼ hours or until center of cake springs back to touch or toothpick in center
comes out clean. When cool, remove sides of cake pan.

Place the berries, lemon juice and sugar in food processor. Puree. Strain to remove seeds.

Dust the cooled cake with powdered sugar. Serve individual slices in a shallow pool of berry sauce.

My favorite kind of cake--rich but not overly sweet. And no icing--only fruit sauce.
