2-3 lb boned rump roast
1 link linguica
1 tsp paprika
4 chopped garlic cloves
1 tsp tomato paste
1/4 c olive oil
3 sliced onions
1 c red wine
1/4 c water
4 chopped carrots
8 potatoes, chunked
salt and pepper to taste

Directions:
Directions:
In a large bowl place the meat and add the wine, onion, garlic, olive oil, paprika, tomato paste and salt and pepper. Mix well. Cover and marinate for at least 8 hours. Place potatoes and carrots in a 2 inch deep baking dish. Place meat on top and cover with the marinade. Slice the linguica and scatter over the vegetables. Pour the water over the meat. Bake at 375º for 1 1/2 hours or until meat is tender.
