For Muffins
2¼ cups all- purpose flour
½ cup sugar
½ cup finely chopped pecans (optional )
1 tbsp baking powder
1 cup (1 large) peeled ,cored, coarsely chopped tart firm cooking apple ( Fuji, staymen, honey crisp)
½ cup melted butter
¾ cup milk
1 large egg
1 tsp vanilla extract
1 cup fresh or frozen cranberries coarsely chopped

For Glaze
½ cup powdered sugar
2-3 tsp milk

Directions:
Directions:
Heat oven to 400º
In large bowl, combine flour, sugar, pecans and baking powder.
In medium bowl, stir together the apple, butter, milk egg and vanilla; stir that into the flour mixture until just moistened
Fold cranberries into the batter.
Spoon into lined or greased mini - muffin pan.
Bake about 15-20 minutes - they won't really turn brown so judge by lightly pressing into the middle for center to return sightly or use a toothpick and insert in a muffin - if it comes out clean they are done.

Mix glaze and drizzle over tops.
They will keep a couple of days in an airtight container.

They can also be made as regular sized muffins - or in a small square cake pan - adjust cooking time longer.
