2½ cups sugar
½ cup water
½ cup white corn syrup
½ teaspoon salt
2 egg whites- room temperature
1 teaspoon vanilla extract
1 cup chopped pecans
Toasted pecan halves for garnish

Directions:
Directions:
Cook first 4 ingredients in a heavy 2 quart saucepan over low heat until sugar dissolves and candy thermometer registers 248º- about 15 minutes. Remove syrup mixture from heat.

Beat egg whites at high speed until stiff peaks form. Pour the hot syrup in a thin stream over egg whites, beating constantly at high speed for 5 minutes. Add vanilla to egg whites while beating. Beat constantly at high speed until mixture holds its shape ( about 10 or 12 minutes. Stir in 1 cup of chopped pecans.

Drop mixture quickly by rounded teaspoonful's onto lightly greased wax paper or parchment paper. Garnish if desired with toasted pecans halves. Cool.
Remember to work fast and dip the candy from the bottom of the bowl as you go as the candy starts to harden first from the bottom of the bowl.
