3 lbs octopus cut in large pieces
4 Tbl olive oil
1 onion chopped
4 cloves minced garlic
5.5 oz tomato paste
1 cinnamon stick
1 bay leaf
1 c white wine
1 tsp salt
1 1/2 tsp tabasco

Directions:
Directions:
In large pot heat the olive oil. Add the onion and sauté until slightly softened, add garlic. Sauté 2 minutes. Add the tomato paste, cinnamon, bay leaf and wine. Stir until paste is dissolved. Add salt and tabasco. (It will be very thick, do not add water). Add octopus and mix. When it starts to bubble decrease the temperature to medium and let simmer 1 hour. Test to see if octopus is tender, if not simmer longer. Add additional salt as needed.
