12 oz penne
2 cups thinly sliced sweet red and/or yellow peppers
2 cups chopped tomatoes (or grape tomato)
3/4 cup diced cucumber
3/4 cup sliced red onion
1/4 cup chopped green onion
1/2 cup chopped coriander
3 tbsp olive oil
3 tbsp lime or lemon juice
2 tsp garlic, minced
Feta cheese (as much as desired)

Directions:
Directions:
1. Cook pasta in boiling water according to package directions until firm. Drain, rinse with cold water, cool, and put in serving bowl.
2. Mix all other ingredients together (except feta) and toss with cold pasta.
3. Add feta just prior to serving. Toss.
