Homemade Ice Cream Recipe

Ice Cream Base:

2 quarts of Half and Half
1½ tsp. Vanilla extract
1 can sweetened condensed milk (Eagle Brand)
1¼ cup sugar

Mix all ingredients in a one gallon freezer can. Place the can in the tub and layer with ice and rock salt. I use about 2½ cups total of rock salt with about ½-¾ cup per layer of ice.

Other flavors:

Praline - substitute brown sugar for white and use ¼ maple flavoring. May also put in 1 cup of chopped nuts (pecans are recommended).

Chocolate - mix some of the half and half with 1 cup cocoa in a blender before putting into freezer can with remainder of ingredients.

Chocolate Chip Mint - add 1 tsp peppermint extract, some green food coloring and 1 package (12 ounces) of mini chocolate chips to other ingredients in the freezer can.

Coffee - mix some of the half and half with ⅛ cup of instant coffee in the blender before putting into freezer can with remaining ingredients.

Peppermint - take 50 small peppermint candies and crush them either in food processor or in a bag with a hammer and add to vanilla ice cream after it has finished turning in the ice cream maker.

Coffee Heath Bar Crunch - use coffee recipe and add 6-8 heath bars (or Skor bars work well) in the blender with some of the half and half. Add to reminder of ingredients in the freezer can.

Fruit Flavors - use the fresh fruit of choice (except pineapple) and put it through the blender before adding to other ingredients. Mix in some half and half if necessary to grind up fruit. I usually use 6-8 peaches, 1 quart of strawberries, or 3-4 bananas. If your favorite fruit is not in season try a 16 ounce jar of jam, but cut back on the sugar to ¾ cup.

Cinnamon - mix 1 tbsp. of cinnamon with some of the half and half in a blender and add to reminder of the ingredients in the freezer can.

Pistachio - mix in 1 cup to 1½ cups of pistachios that have been peeled and blanched. Also add a little green food coloring to desired color.
