2 cups brown sugar
2 sticks butter
1/2 cup white corn syrup
1/4 tsp cream of tartar
1 tsp baking soda
Optional: 4 cups nuts of your choice (My favorite is Pecan halves)

7 quarts, Popped, white popcorn (dry with no flavor added) and divided evenly between 2 roasting pans. (I like to use the throw away tinfoil turkey roasting pans. Can pick these up any time from one of your Dollar stores)

*** Do not use the pre-bagged microwave oven popcorn. Best to make the popcorn in an Air Popper or on the stove in a pan, DO NOT use any oil in the pan when popping.

Pre-heat oven to 200º

In a LARGE saucepan add brown sugar, butter, corn syrup and tartar. Cook for 5 minutes, stirring constantly. Add the baking soda. You must be very quick in this step. The sugar and cornstarch mixture will rise and foam up as soon as you add the baking soda. Stir quickly to mix together then IMMEDIATELY pour mixture evenly over the pop corn in the roasting pans. Quickly mix with a large spoon, coating the popcorn evenly.

Place roasting pans in oven for 15 minutes, taking out and stirring popcorn to coat evenly. Repeat this step 3 times for a total cook time of 45 minutes.

While cooking the last 15 minutes, place parchment paper on a large surface, such as a table.

Spread popcorn onto parchment paper and allow to cool completely before bagging.
