1 head garlic, top sliced off
1 teaspoon olive oil
2 Tablespoons olive oil
4 chicken breasts, pounded to 1/2 inch thick
kosher salt
ground pepper
4 ounces cremini mushrooms, sliced
2 Tablespoons unsalted butter
1/4 cup white wine
3/4 cup chicken broth
2 to 3 sprigs fresh rosemary
5 ounces baby spinach
juice of 1/2 lemon

Preheat oven to 400º. Drizzle the teaspoon of olive oil over the top of the garlic, wrap in foil. Bake until golden and soft, about 1 hour. Set garlic aside to cool, then pick or squeeze out the cloves and set aside. In a large skillet over medium-high heat, heat the remaining olive oil, season chicken breasts with the kosher salt and pepper, then sear until golden brown, about 3 minutes per side. Transfer to a plate. Return skillet to medium heat, add more oil if necessary, add mushrooms, season with salt and pepper and cook until slightly wilted, about 5 minutes. Add butter and melt, stir in garlic cloves, white wine, chicken broth and rosemary. Bring to a simmer, nestle the chicken back into pan and cook until sauce has reduced slightly, should take about 6 to 7 minutes. Stir in spinach and cook a couple minutes more until spinach has wilted.
