2 Tbsp. Butter or margarine
3 leeks (white part only) sliced
1 white onion, sliced
3 potatoes, peeled & diced
4 cups vegetable or chicken broth
1 bay leaf
½ tsp. pepper (Optional)
¼ tsp. thyme
1 cup milk (or soy milk)
¼ tsp. salt
chopped chives optional garnish

Melt butter in pan over med. heat. Add leeks & onions and sauté for 10 min. Transfer to 6 qt. slow cooker. Add potatoes, stock, bay leaf, pepper and thyme. Cover and cook over low heat for 4 - 6 hours. Remove bay leaf when done. Add milk and purée using an immersion blender or traditional blender. Season with salt and garnish each bowl as desired.6
