6 strips of bacon, chopped
One medium onion, chopped
2 lbs. red cabbage, finely chopped
¼ C sugar
½ Cup apple cider vinegar
2 sour apples (like granny smith), peeled and chopped into large chunks
1 tsp salt
¼ tsp pepper

Directions:
Directions:
In a large pan, cook the bacon until fat is rendered and bacon pieces are crisp. Add onion and saute on medium heat until onion is soft. Add cabbage and all other ingredients. Bring to a boil and then reduce heat to low. Cover and cook at least one hour, stirring occasionally. Add water if pan get too dry.
