½ cup chopped walnuts
2 cups all purpose flour
¼ cup unsweetened cocoa
½ tsp baking powder
½ tsp baking soda
½ tsp salt
3 large eggs, lightly beaten
1¾ cups sugar
1 cup canola oil
1 tsp vanilla extract
1 oz unsweetened chocolate, melted
2 cups grated zucchini (1 medium)

Directions:
Lightly oil two 8x4 inch loaf pans or coat them with non-stick spray
Spread walnuts in a pie pan and bake for 5 to 7 minutes. Set aside to cool
Sift flour, cocoa, baking powder, baking soda, and salt into a large bowl
In another large bowl whisk eggs, sugar, oil, vanilla and melted chocolate until blended
Add dry ingredients and stir with a rubber spatula until just combined.
Fold in zucchini and walnuts
Spoon batter into prepared pans, smooth tops
Bake at 325º for 55 to 60 minutes or until a skewer inserted in the center comes out clean
Cool in pans on a wire rack for 10 minutes. Invert onto rack and cool completely
