Ingredients: Cake: 3 Eggs 3/4 cup Granulated Sugar 1/2 tsp Vanilla 1/2 tsp Almond Extract 3/4 cup Sifted Cake Flour
Orange Ginger Sauce: 1/2 cup Frozen Orange Juice 1 tsp Grated Lemon Peel 1 tsp Lemon Juice 1/2-5/8 cup White or Brown Sugar 1 Tbsp or more Chopped Candied Ginger Juice from 11 oz Can Mandarin Oranges

Directions:1. Improvise a steamer and bring water to a gentle boil. This is like preheating your oven. (Rack can be a heatproof dish right side up with water in it to stabilize or empty flat can from pineapple with the two ends removed.) 2. Place eggs and sugar in a 1 1/2 quart mixing bowl. Beat for 5 minutes or until creamy 3. Add the remaining ingredients and blend on low speed for 1-2 minutes until smooth. 4. Pour into 9 " round cake pan, bottom lined with wax paper. 5. Put into steamer with water gently bubbling for 15 minutes or until comes out clean when inserted in the center of cake. Cake can be left in pan to keep warm (drain off water from lid). To remove cake from pan, run spatula around the sides, invert pan over and peel off wax paper. Cut cake into wedges.
For Orange Ginger Sauce - Stir all ingredients together, and cook over medium heat till thick and translucent. Remove from heat, add oranges. Serve warm over sponge cake.
