1 LB CAULIFLOWER FLORETTES
4 OZ SOUR CREAM
1 C CHEDDAR CHEESE, SHREDDED
2 SLICES BACON, CRUMBLED
2 TBSP CHIVES
3 TBSP BUTTER
¼ TSP GARLIC POWDER
SALT & PEPPER TO TASTE

Directions:
Steam cauliflower until soft.

In bowl mash cauliflower, butter, sour cream, garlic powder until it resembles mashed potatoes. Add chives, half cheese & mix together. Mix salt & pepper & transfer to baking dish. Top with remaining cheese & bacon. Broil until cheese is melted.
