2 cups white sugar
1 cup vegetable oil
3 T. vanilla
2 cups zucchini, shredded
3 cups flour
1 tsp. salt
1 tsp. baking soda
¼ tsp. baking powder
3 T. cinnamon

Directions:
Directions:
In a large mixing bowl, beat together sugar, eggs, vanilla and oil. Stir in zucchini. Beat in flour, salt, baking soda, baking powder and cinnamon. Stir in walnuts. Pour ½ batter into each two sprayed 9x5 loaf pans or one loaf pan and A twelve cupcake pan ⅔ full or 2 twelve cupcake pans. Bake at 325̊ for 45 to 60 minutes for loaf. Twenty minutes for cupcake size. Or until toothpick inserted in center comes out clean.
