Salad:
1 can black beans, drained and rinsed
1 avocado, seeded and cubed
1 can corn or equal amount frozen corn
2 cups cherry tomatoes, halved
1/2 - 1 cup red onion, diced
1 medium cucumber, chopped
1/3 cup cilantro, rough chopped
Optional: sweet peppers, chopped

Dressing:
juice of 1 lime (or substitute balsamic vinegar)
3 tablespoons extra virgin olive oil
2 tablespoons fresh cilantro, finely chopped
1/2 teaspoon garlic powder or a clove or two of fresh garlic
salt and pepper to taste


Directions:
Directions:
Place all the veggies in a large bowl (except the avocado) and toss to combine.
In a small bowl, whisk the lime juice (or balsamic vinegar), olive oil, cilantro, garlic powder (or minced fresh garlic).
Pour dressing over veggies and toss to combine. Now add avocado and toss gently so they don't mash together. Taste for salt and pepper, add as needed.
Best if allowed to sit in the fridge for awhile to absorb flavors
