4 medium zucchini, sliced ½-inch thick
¾ cup shredded carrots
½ cup chopped green onions
6 teaspoons butter
1 can cream of mushroom/celery/chicken soup
½ cup sour cream
2¼ cup stuffing mix

Directions:
Directions:
Cook zucchini until slightly tender (set aside).

Cook carrots, onions in 4 teaspoons butter until tender. Remove from heat. Stir in one-half of the stuffing mix, soup and sour cream. Add zucchini.

Pour into 9x12-inch baking dish. Melt remaining 2 teaspoons butter and mix in remaining stuffing mix. Spread over zucchini mixture. Bake at 350º for 35 to 40 minutes until lightly browned on top.

NOTE: Can use corn bread stuffing mix as well.
