2 tbs oil

4 cups chopped onion

1 cup chopped yellow pepper

1 cup chopped green bell pepper

4 garlic gloves minced

2 tbs brown sugar

3 tbs chili powder

2 teas ground cumin

2 teas dried oregano

1 teas salt

1 teas black pepper

4 16 oz cans stewed tomatoes, undrained

4 15 oz cans black beans, rinsed and drained

2 15 oz cans kidney beans, rinsed and drained

2 15 oz cans pinto beans, rinsed and drained

Directions:
Heat oil over medium high heat. Add onion, bell peppers, and garlic. Saute for 5 min or until tender. Add sugar and remaining ingredients and bring to a boil. Reduce heat and simmer for 30 minutes. Prepare toppings as desired (e.g., shredded cheese, fresh chopped tomatoes, sour cream, chopped avocado, cilantro, hot peppers, etc). Sometimes served with tortilla chips or cornbread.

This is great for big groups or to make for yourself and freeze. This recipe below will make a lot (you'll want a very large pot) or can be halved.
