1 chicken, cut into 8 pieces
Juice and zest of 2 lemons
2 tbsp olive oil
1 tsp dried oregano
2 tbsp fresh rosemary- minced
3 tbsp fresh basil- chopped
2 cloves garlic- minced
2 tbsp red wine vinegar
1 tsp salt
1/2 tsp fresh ground pepper


Directions:
Directions:
Place cut up chicken in a ziplock bag or marinating container. Cut the breasts in half, if very large.
Add all other ingredients and seal. Marinate overnight, or at least several hours.

Pour all contents into oven proof baking pan. Bake at 350 for 70 minutes.
Serve with choice of rice, potatoes, pasta, or vegetables.
